Date Muffins

Delicious with a cup of coffee for a quick lunch or breakfast.

Dry Ingredients

2 1/2 cups of self raising flour

Wet Ingredients

1 cup chopped dates
1/2 cup water
1/2 cup margarine
1/2 cup milk
1/4 cup sugar or golden syrup


Preheat oven to 200 degrees Celsius

Soak dates in the water for 1/2 an hour.
Add other wet ingredients and mix thoroughly.
Add sifted flour and mix thoroughly but gently (try not to mix more than 12 times gently with a wooden spoon).
Grease and flour muffin tins.

Bake in 200 degree C oven for 20 minutes.

Makes 10 large muffins.
