Moist Fruit Cake


6ozs self-raising flour
5ozs sugar (soft brown is best)
4ozs soft margarine
2 eggs

1 large tbsp marmalade (or other preserve)
half cup of fruit juice (especially nice with juice from fruit you have stewed the day before)
large handful of dried fruit


Beat first 4 ingredients together with electric mixer until well blended.
Add marmalade and fruitjuice and beat again to a very thick batter.
Stir in fruit.
Bake in 2lb loaf tin at gas mark 4 for about 1 hour.
