Moist Fruit Cake

Ingredients

6ozs self-raising flour
5ozs sugar (soft brown is best)
4ozs soft margarine
2 eggs

1 large tbsp marmalade (or other preserve)
half cup of fruit juice (especially nice with juice from fruit you have stewed the day before) large handful of dried fruit

Method

Beat first 4 ingredients together with electric mixer until well blended.
Add marmalade and fruitjuice and beat again to a very thick batter.
Stir in fruit.
Bake in 2lb loaf tin at gas mark 4 for about 1 hour.
