Anzac Biscuits (Cookies)

Crunchy oatmeal and golden syrup biscuits (cookies). The biscuits were a favourite for the folks back home to send their men in times of war, hence the name. (Anzac = Australia/ New Zealand Army Corp)

Ingredients:
4 oz butter or margarine
1 tablespoon golden syrup
2 tablespoons boiling water
1 1/2 teaspoons bicarbonate of soda
1 cup rolled oats
3/4 cup desiccated coconut
1 cup (4 oz) plain flour
1 cup (8 oz) sugar

Method:
Melt butter and golden syrup over gentle heat, add mixed boiling water and bicarbonate of soda. Pour into mixed dry ingredients and blend well.

Dropped teaspoons of mixture onto a greased tray. Bake in a slow oven (300 degrees F/150 degrees C) for 20 minutes. Cool on trays for a few minutes. Remove and store in airtight containers when cool.

Makes about 4 dozen.
